The Great Big British Breakfast

This is one of my favourite things about the Slimming World plan. You can literally eat as much bacon, eggs, baked beans and potato as you desire and still lose weight. When I first heard about this I thought “don’t be so bloody ridiculous”. But it’s true. I know because I frequently push the Slimming World “fry up” to the absolute pinnacle of gluttony just to check.

Ingredients

  • Eggs 4-6
  • 8 rashers of bacon
  • Half a punnet mushrooms
  • Baked beans
  • 8 medium white potatoes, peeled and cubed

Serves 4

0 syns per serving – add 2 slices bread from a 400g brown loaf as part your healthy extra

Method

Pre heat oven to 190. Par boil potatoes for 5 minutes. Drain and shake. Then place on a baking tray and spritz with Fry light. Season with salt and pepper. Place in oven and cook for 20 minutes.

Chop the mushrooms then fry in a pan coated in Fry light.

Grill the bacon. You can remove the fat prior to cooking or just before eating. Alternatively buy bacon medalions as they have no fat rind.

Warm the beans.

Crack the eggs into a jug. Season. Then whisk with a fork and cook in a saucepan, stirring constantly until they look creamy and almost set.

Serve and enjoy. In our house I just put the pans on the table and invite everyone to help themselves.

(The jam on the table in the picture would have to be synned. It was demanded by my 3 year old)
